Skinny 5 Minute Cookie in A Cup PLUS Ice Cream


Hi Guys & Happy Sunday! 
Sunday's are for indulging and getting all cozy and warm, so I'm coming at you with a quick  and easy recipe. I'm always hungry, so whilst I'm not eating I'm always looking at recipes fml. Must be a sign of getting old...20 going on 40...

Anyway, it's your classic cookie in a cup recipe replacing the ingredients with more healthy alternatives. 

All you need:
  • 1/4 of a cup of White Wholewheat flour (or coconut flower, add a bit of water at some point when using coconut flower)
  • 1 table spoon of almond butter 
  • 2 tablespoons of brown sugar 
  • 2 drops of vanilla extract 
  • pinch of salt
  • 1 egg yolk
  • and dark chocolate drops

Directions: 
Melt the almond butter in mug (microwave or pan) until its runny and combine with the sugar, vanilla extract and salt. Stir in the egg yolk until its an even consistency. 
Then add the flour and mix thoroughly. Add your chocolate drops or any chocolate that you have lying around and whack it in the microwave for 30 seconds. Depending on how you like your cookies, microwave it to your liking. ( I microwaved mine for a total of 1 minute as I'm not a fan of gooey cookies) 

Depending on how you like yours presented, you can let it cool a little and scoop it onto a plate or directly top it with ice cream in the mug :)

It so easy and so quick, perfect for those days when you want something sweet and still slightly healthy.
